The fatty insaturated fats are divided into:
-Monosaturated fats: oleic acids (C18.1) is the principal acid in EVOO And is a healthy fat aporting 55% to 83% of the total number of acids.
-Polinsaturated fatty acids: containing 4% to 20% of linoleic acids.
It’s very rich in vitamin E, A, D And K, however what really benefits your health is the polyphenols , carotenes, and fenols it contains, which give an antioxidant effect which is very beneficial for our organs and arteries.
